DEN : The Evolving Tokyo-Japanese Cuisine

This book contains course strategies and expressions of Den, a small Japanese restaurant known for its high profile from overseas gourmets.

“Den” is based on traditional Japanese cuisine and seeks to make it accessible to beginners. They believe that formal dining alone is not enough to broaden the fan base of fine Japanese cuisine, and aim to combine the spirit of omotenashi (hospitality) that Japan is famous for with the familiarity of a trattoria.
